Mediterranean Crunch Salad

Did you know that every Wednesday, the Whole Foods hot bar is $6.99 instead of its normal $8.99? I have perfected my favorite hot bar meal- two falafel with tikka masala sauce on them, a slice of naan, and two enormous scoops of Mediterranean crunch salad.

Last week I decided to make my own. All you need is a bag of kale with the stems removed, some green or kalamata olives, cherry tomatoes, chick peas, and cucumbers, peeled and sliced. The Whole Foods kale is ripped very small, so i put half of the kale into the food processor and chopped it on the largest setting. I then squeezed half a lemon worth of juice over the whole salad, and shoot a few tablespoons of vinegrette over it all, finishing with a few dashes of salt and pepper.

This was even better after it had all been sitting in lemon juice overnight. It made a perfect lunch the next day with a few slices of Boars Head turkey. And you know that if I like anything, it is food that will be easily re-purposed for lunch. Laziness triumphs once again.
