Buffalo chicken spaghetti squash recipe

If you did not happen to see the list of the top Pinterest food pins of 2013, I will give you the Reader’s Digest version: people love cheese, people love buffalo, and people love “skinny” versions of their favorite calorie laden foods. This snack accomplishes a hat trick of those specifications.


1 whole spaghetti squash
250 g light cream cheese (one brick- room temperature)
1/4 cup of your favorite hot sauce
½ cup light shredded cheese
1 large chicken breast

To make this, first you must cook the spaghetti squash. Cut the squash in half lengthwise using the largest and sharpest knife you have, using extreme cautions. These things can be a brick to get through. First scoop out all of the seeds from the inside, and spray olive oil on each half. I like to shake a little bit of salt, pepper,  and garlic powder over each side for more flavor. Lay on a cookie sheet and bake at 375F for 50 minutes. While that is cooking, saute or bake a large chicken breast, and shred when it is fully cooked.

When your squash is done, shred the pulp using a fork, and then scoop out the flesh of the inside with a large spoon and deposit into a mixing bowl. Add the cream cheese, shredded cheese, hot sauce, and shredded chicken, and mix well.

Serve warm with tortilla chips. I also ate it by scooping a mouthful onto the end of a celery stick.

This snack will be perfect for an upcoming Super Bowl party. I presume that for many football fans, now with the Patriots out, as well as the 49ers (if you are my sister and brother-in-law) the Super Bowl will be more about snacks, commercials, and half time than the game itself.
