I go through granola at an olympic pace. I don’t even know how this is the case, because I only use it on top of yogurt, although many people use it as cereal. If you struggle with the same problem, then you will love this recipe! If I had had an appreciation for how easy it was to make your own granola earlier on, I would not have been knocking down the East Side Market doors for my fix.
6 cups of old fashioned rolled oats (do NOT use instant oatmeal)
1 cup of chopped walnuts
1/3 cup vegetable oil
2/3 cup honey
Generous shakes of cinnamon
Heat the oven to 250F. Mix all ingredients in a bowl with your hands. Do not worry about being a sticky mess, you can wash your hands as soon as you are done and this is the easiest way to get all of the oats covered in honey. Spread the mixture on a greased baking sheet, and bake for 90 minutes, stirring after every 30 minutes.
Once you take the granola out of the oven, you can add other items like dried fruit- I used craisins and shaved coconut. If you put them in while the sheet is still in the oven, the fruit will burn right up.
I know that the granola was a success because when I gave small mason jars full to my friends to take home to their families, they sat at the kitchen table spooning handfuls into their mouths instead.
