These oven roasted tomatoes are a warm, colorful, and delicious side to any meal, and they could not be easier to make. Take one container of multi-colored grape tomatoes and toss with olive oil, bread crumbs, and grated parmesan cheese. I also added some shaved parmesan, because you can never be too heavy handed with it.
Heat the oven to 375 degrees, and cook tomatoes 30 minutes in a casserole dish. Top with fresh basil leaves and serve with chicken, fish, or eat on their own!
